The February-opened Paradero Todos Santos offers more than just a chic stay for travelers in the south of Mexico’s Baja California peninsula.

Size, in square feet, of the property’s botanical garden. Outfitted by Mexico City-based landscape architecture firm Polen, the spread has 80 native species of plants, including red sand verbena and Mojave yucca. There are more than 20,000 plants total, which include some that existed on the land before Paradero was built. In sum, the property is 80% landscape and 20% development.

The number of peppers grown in the Paradero’s separate chili garden that chef Eduardo Rios — who previously worked at Mexico City’s Pujol, ranked one of the world’s best restaurants in 2020 — uses to heat up dishes, all of which include a maximum of five ingredients. Chef Rios is now one of five Mexican chefs collaborating on the inaugural “Taco Series,” serving Paradero guests their own spins on regional classics — such as Baja fish tacos and ceviche tostadas — on select weekends in October, November and December.
